- Lay on a baking tray with at least an inch apart. Skin side up. Place 1 garlic bulb on the side (not in photo)
- Preheat the oven to 200°c, on fan with both heating elements on. Place the tray in the middle, let it bake for 10 minutes. After 10mins, switch to GRILL function on highest temp for 3 minutes. (total 13 mins in the oven)
- Carefully take out the tray and let the peppers rest before slicing them to strips.
- Meanwhile, make the dressing. Mix the balsamic vinegar, honey, salt and pepper, olive oil, basil, sliced shallots and grilled garlic. Adjust the ratio of ingredients to your taste.
- This is optional but I pan fried some eggplant. I didn't grill them together coz they bake longer. Slice to strips.
- Plate the peppers and eggplant, pour the dressing. Mix and let it sit for at least 5 to 10mins before serving to let the flavours blend. Enjoy!
