  16. 2 tablespoons tomato paste
  17. 1 tablespoon paprika

  3. Chop the spring onion and mint and mix with lemon juice, a pinch of salt and pepper and a little olive oil.
  4. Once cooked, pour the dressing on the aubergine. Top with pomegranate seeds and crumbled feta then drizzle some pomegranate molasses. Enjoy :)
