  1. Simmer in a covered pan: crushed tomatoes, tomato sauce, tomato paste, oregano, salt and pepper.
  2. Sauté in vegetable oil until lightly browned: onions and garlic.
  3. Add to tomato sauce. Simmer over low heat for 1-1½ hours.
  4. Preheat oven to 230 C or 450°F. Place vegetables in a large bowl.
  5. Toss with oil.
  6. Turn on to a large oiled baking sheet and bake in preheated oven 25 to 30 min. until tender.
  7. Remove from oven and toss with 1/4 cup chopped parsley, salt and pepper.
  8. Cover bottom of large deep lasagna dish with 1/3 of the sauce, place ½ noodles crisscross (or in one layer, depending on how much pasta you like,)cover noodles with ½ cottage cheese, all of thawed spinach, ½ of the roasted vegetables, ½ of Mozarella, 1/3 Parmesan.
  9. Repeat ending with sauce and Parmesan cheese.
  10. Bake uncovered at 350°F for one hour.
  11. Let stand 10-15 minutes before serving.
